Cask Release Marks Whisky’s Arrival in Inverness

Uile-bheist Distillery has launched a special limited release of quarter casks to celebrate the long-sought revival of malt whisky distilling in Inverness.

The Highland capital was once known as a ‘malting town’ but its links with distilling disappeared completely in the 1980s when its trinity of distilleries suddenly closed down, with major job losses.

Now Uile-bheist is reconnecting enthusiasts with that proud heritage by launching a trio of unique casks which mark a new beginning for single highland malt whisky production in the city.

Uile-bheist’s malts, made using water from the River Ness, are the first to be produced in Inverness for over 40 years, since the demise of the Millburn, Glen Mhor and Glen Albyn distilleries.

The company’s Head Distiller, Drew Shearer, says the new malt offerings, matured in charred, peated and un-peated casks, offer buyers a choice of layered, balanced and characterful whiskies – as well as a piece of history.

Whilst developing its new cask programme, the Uile-bheist team has also been working with historian Jason Julier, to piece together the remarkable stories of the lost city distilleries.

At one time, Novelist Neil Gunn was exciseman at Glen Mhor whilst 3 bottles of Mackinlay’s malt, from the same distillery, were salvaged from the ice under Sir Ernest Shackleton’s Cape Royds Antarctic expedition hut in 2010 and found to be near pristine after almost 120 years.

Honouring these traditions, whilst ushering in a modern chapter, Uile-bheist hope to incorporate some of the rare artefacts and images of the past for Tour visitors to its state-of-the-art distillery on Ness Bank.

The new 125-litre cask offerings, from its youthful distilling team, evoke classic traits of Highland single malt production in Inverness but with several modern twists.

Like former distilleries, Uile-bheist uses local malting barley grains, from Bairds Malt in the city, but its production methods are amongst the most sustainable in the whisky world, today.

A pioneering Sustainability Centre uses water from shallow water wells in the River Ness for production, assisted by solar PV installations which save 250 tonnes of carbon per year.

Scientifically advanced stills technology from renowned German coppersmiths, Kaspar Schulz, makes for high precision distilling, and brewer’s yeast is used in the fermentation to develop crisp, estery flavours; a unique innovation reflecting Uile-bheist’s dual nature as a distillery and brewery.

A minimum fermentation time of 96 hours produces a creamy, banana-forward flavour profile to the Uile-bheist Highland Single Malt, now in year two of production.

“We are proud to bring these limited quarter casks to the market, the first chapter in the Inverness whisky revival,” said Head Distiller, Drew Shearer.

“So much detail and precision goes into our new-make spirit and we select the casks very carefully to produce the high quality we want; quality that the city was always known for.”

He added: “Our charred quarter casks will give rich vanilla notes to the whisky. When charring, lignin in the wood is broken down to produce vanillin. That will provide a fresh, vibrant flavour with layers of sweetness and depth.

“The un-peated quarter casks will provide a more mellow, delicate flavour and a little flora in the maturation which will deliver a subtle, refined flavour.

“With the peated quarter casks, you will pick up some of the distinctive smoky, seaweed character from the Islay malt whisky previously matured in those casks.”

The quarter casks, all priced at £3750, are available on Uile-bheist’s website.

Whisky consultant Mitch Bechard, said: “It’s exciting to see Inverness reclaim its place on the whisky map.”

Record Results for Salford-Based Family Owned Brewery

Salford-based brewer and pub retailer Hydes has announced a record turnover for the financial year 2023-24.

The family-owned independent business achieved the record results following investment in refurbishments and the opening of a landmark site on the Wirral.

In accounts for the year to 31 March 2024, Hydes reported turnover of £39.3m, up £5m from the previous year.

The results improve on last year’s previous record turnover figure of £34.1m which was up £5.8m on 2022’s figure of £28.3m.

Formed in 1863, Hydes’ Brewery is a pub retailer and brewer headquartered in Media City, Salford. It supplies beers to wholesalers, pub companies and other brewers throughout the UK and has a pub retailing estate of nearly 50 pubs across the North West of England and North Wales comprising 33 managed and 12 tenanted pubs.

Turnover increase was due to numerous successful refurbishment projects, investment in and opening of a new managed site at Heswall and growth of contract brewing sales.

Hydes opening of the Harry Beswick in November 2023 in Heswall has been a great success and it has continued to trade successfully as the venue approaches its first anniversary. The pub, named after celebrated local architect Harry Beswick, was acquired in 2022, and is Hydes’ first site purchase since 2015. The business subsequently invested over £3.6m in refurbishing and extending the historic building which previously served as the police station in the Wirral town.

Overall, pre-tax profits for the period rose from £2.3m to £2.6m.

Major refurbishments were completed at the Crown Inn and James Watts in Cheadle, The Vine Inn in Nantwich, the Abel Heywood in Manchester and the Mount Inn in Chester.

Adam Mayers, managing director of Hydes commented: “Once again, Hydes has shown resilience, innovation, and customer loyalty, resulting in a record-breaking turnover for the second successive year. This reflects the brewery’s commitment to delivering exceptional products and services and also highlights that investment in our pubs and our people remains a key priority.

“The pub estate was maintained to a high standard, quality refurbishments undertaken and the first freehold acquisition in over a decade are all significant factors contributing to ongoing success. Brewery volumes increased sharply and the tenanted estate performed well.

“The strong results recorded this year are a testament to the hard work of our entire team across every part of our business in both this and previous years.”

Hydes operates nearly 50 pubs ranging from Lancaster in the North to Stoke-on Trent in the Midlands and across to North Wales including a wide selection of premium dining destination outlets and traditional community pubs.

This year’s Festival will launch with a themed music quiz night held in the pub’s famous Scandinavian-style tipi followed by a packed programme of musical entertainment which will see 15 acts play over Saturday and Sunday across two stages, the main stage and the tipi stage.

It’s really important to us that this is a free event, as it makes it accessible to all, so parents with little ones can pop by for an afternoon drink and listen to the music and those that want a full weekend can stay as long as they want to.

“There’s usually a couple of thousand visitors across the weekend at various times so there’s a brilliant atmosphere and we’re expecting this year’s festival to be bigger and better than ever before. It’s lovely that our surrounding communities are so supportive of the event as it really does bring everyone together in a safe and enjoyable environment.

Forget cheese and wine night, It’s All About Whisky Pairings in 2024

Move over, Merlot! The world of food and drink pairings is undergoing a delicious revolution, and in 2024, whisky is taking centre stage. Forget the predictable cheese and wine routine –  imagine the bold tango of a smoky Islay malt with a strong cheddar cheese, or a Campbeltown whisky served up with your favourite charcuterie board. The possibilities are as endless as your whisky collection.

Whisky pairings aren’t just about highlighting a dram’s finish – they’re about creating culinary symphonies.  Think: a coastal single malt like Old Pulteney emulsified into a whisky lemon butter for seared scallops, or a Speyside dram elevating the smoky notes of cured salmon alongside a dollop of cream cheese.

Ready to get started? Old Pulteney is offering a chance to win a bottle of their 15-year-old whisky (valued at over £70) by taking their online dish and dram pairing quiz. It’s your passport to a world of unforgettable culinary discoveries, from mastering the art of pairing to uncovering surprising flavour combinations.

So, raise a glass to the future of food and drink exploration!  Whisky pairings are here to stay, and with a little experimentation, you might just discover your new favourite foodie adventure.

The Five Faces of Flavour and their recommended food pairings:

Scotland’s whisky-making landscape boasts five distinct regions, each contributing its unique geographical fingerprint to the spirit.

  • Speyside: Renowned for its gentle, honeyed notes, Speyside whiskies like Glenfiddich pair beautifully with creamy cheeses, smoked salmon, or even delicate desserts.
  • Highland: Offering a wider spectrum of flavours, from floral to malty, Highland whiskies like Dalwhinnie complement richer dishes like roast lamb or grilled vegetables.
  • Lowland: Known for their smooth, grassy character, Lowland whiskies like Glenkinchie find harmony with lighter fare like fresh oysters or white fish.
  • Islay: Characterized by their bold, smoky notes, Islay whiskies like Ardbeg are a daring match for strong cheeses or game meats.
  • Campbeltown: Offering a balance of fruit and spice, Campbeltown whiskies like Springbank pair well with red meats or cured meats like charcuterie.

A Coastal Twist

Beyond regional styles, specific locations can also influence flavour profiles. Old Pulteney is a single malt whisky distilled where the North Sea meets the Caithness coast. The cool, maritime climate and proximity to the ocean imbue Old Pulteney with a distinctive briny character, making it a natural partner for seafood.

Why not try Old Pulteney with:

Seared scallops with Old Pulteney and lemon butter sauce: The sweetness of the scallops and the tang of the lemon butter complement the briny notes of Old Pulteney.

Pan-fried cod with seaweed salad: The delicate flavour of the cod is accentuated by the salty, umami-rich seaweed salad, while the whisky echoes the ocean essence.

Smoked salmon carpaccio with dill creme fraiche: The smoky notes of the salmon and the creamy richness of the dill creme fraiche find harmony with the smoky and creamy depth of Old Pulteney.

Prawn cocktail with a touch of Old Pulteney in the dressing: The whisky adds a subtle smoky complexity to the classic prawn cocktail, creating an intriguing flavour experience that is a twist on an old favourite.

These are just a few suggestions to get you started. The beauty of whisky pairing lies in exploration. Experiment with different regional styles and food combinations to discover what resonates with your palate.
